Delicious Drinks: Watermelon Cucumber Margarita with Mint


To close out the weekend with my sister, we made one last margarita that had all of the things in it.  The basic strategy for the last night of her visit was to use all the leftover fresh ingredients in some way so that they wouldn't go bad when she returned to VA and I headed to NJ for the week.  What to do with watermelon, cucumber, limes, and mint?  Mix them with tequila, of course!

Watermelon Cucumber Margarita

1 1/2 c. 1-inch chunks rindless watermelon, plus extra for garnish
6 thin slices English hothouse cucumber, plus extra for garnish
15 large fresh mint leaves, plus extra sprigs for garnish
1/2 cup 100% blue agave silver tequila
1/4 cup fresh lime juice
3 tablespoons rich simple syrup
1 tablespoon Cointreau or Grand Marnier
2 cups ice cubes, divided


Place watermelon, cucumber, and mint in medium bowl (reserving extra for garnish). Press firmly on solids with muddler, potato masher or back of wooden spoon until mashed. Mix in tequila, lime juice, rich simple syrup, and Cointreau, then add in one cup ice. Stir to blend well. Strain into large glass measuring cup. Divide remaining ice between 2 tall glasses. Pour margarita mixture over and garnish with watermelon and cucumber on skewers and mint sprigs.
